Thyme is an excellent additive to meats, fish, and poultry, but also pairs well with many vegetables, such as potatoes or eggplant, and adds a flair to pesto. For the greatest benefit when cooking, add thyme early in the process so the oils and flavor have time to be released. For roasted and grilled meats, thyme pairs well with rosemary and sage.
